Dinner is in the Freezer!

Now that classes have begun, I will be burying my face in textbooks until December.  So, I began freezing homemade meals for two people.  I really want to reduce the amount of time and money we spend on pre-packaged, processed, frozen dinners, and going out to eat.  I want healthier, home-cooked food for me and my family.  Since I won’t be able to cook a good dinner for us every night.  I wanted to start stock-piling a nice variety of homemade, home-cooked frozen dinners for us all.

Tonight I started with lasagna!  I found little aluminum trays with lids at Kroger.  They’re the perfect size for small lasagnas.  I didn’t want to mess with lasagna noodles.  Instead, I wanted to use up the penne pasta I had in my pantry.  I cooked ground beef and sausage.  Bought some mozzarella and ricotta cheese.  3 jars of spaghetti sauce.  And I went to work!

 

This is the perfect size for me, and Aaron!  Nice cardboard lids, too, for stacking them in the freezer.

Into the freezer it goes!  I made FIVE lasagnas!  This will be perfect for the chilly autumn nights to come!  Good food for the family!  Quick and easy!… and back to studying I go!

Pool and Popsicles ♥

Faith is enjoying the last of these hot summer days!   I learned that pools are the best place to eat Popsicles.  No sand, dirt, or dog poop stuck to it every time she drops it… and she’s instantly clean after sticky, melted Popsicle gets all over her.

How do you like those apples? :)

We all took a trip to Musgrave Orchards today!  It was lots of fun.  I have never been there before.  Such a cute little store; stocked with fresh produce, and handmade items.   A pretty little pond near by, and beautiful apple trees!  1M9C0984

We bought a large bag of Paula Red apples for baking, 3 huge peaches, a jar of pumpkin butter, and a gallon of fresh apple cider!  When we came home, I pulled out my trusty apple peeler/corer and went right to work!

First I got started on making apple butter in my crock pot.  The kitchen smelled SO GOOD!

I made a few freezer jars full of apple butter.  Two in the freezer, and one in the fridge.

I also made an apple pie.  I hate making pie crust, but this time, it surprisingly turned out ok! :)

I have eaten so many yummy things tonight, I could bleed cinnamon and spices!   We had a great day!
